In accordance with WAC 246-215, as referenced in Chapter 8 part 2 of the Washington State Retail Food
Code Working Document, this agency has reviewed the food menu, the food preparation sheet, and the
building construction plans for the above -referenced project. We have found the plans to be incomplete
and are not approved for the following reasons:
1. Will all fruit used for the smoothies be commercially pre -washed and ready -to -eat? Provide
information.
2. Provide the dimensions of the three -compartment sink. The compartments must accommodate
the largest utensils that must be cleaned and sanitized.
3. Indicate the location of the ice machine on the floor plan.
4. Provide the plumbing schedule and all floor sinks.
5. The front foodservice area must have a designated handwashing sink. Will the two sinks near the
drive-thru windows be used for handwashing only?
6. In addition to food service areas, all food storage areas with light fixtures must have protective
covers.
A fee of $100.00 per hour is charged for plan review and pre -occupancy inspections. Enclosed is an
invoice for the plan review. An invoice for the pre -occupancy and any additional plan review fees will
be given to the person in charge at the time of the pre -occupancy inspection. The fee is to be paid within
30 days of receipt of invoice. A $90.00 late fee will be applicable if the plan review and pre -occupancy
fees are not paid within the 30 days.
All employees handling unwrapped food are to obtain a food worker card within 14 days of employment.
