Dear Mr. Singlestar:
In accordance with WAC 246-215, as referenced in Chapter 8 part 2 of the Washington State
Retail Food Code Working Document, this agency has reviewed the food menu, the food
preparation sheet, and the building construction plans for the above-referenced project. We have
found the plans to be incomplete and are not approved for the following reasons:
1. Please submit completed page 1 of the application.
2. Submit detailed floor plan.
3. Provide information about produce washing and/or use of commercially pre-washed
produce.
4. Submit revised commissary agreement.
5. Provide information on the wastewater tank size.
6. Broken plexi-glass ceiling must be repaired or replaced.
7. Damaged floor section near the back door must be repaired.
8. All light fixtures must have covers.
9. The truck must have Labor&Industry approval with Washington State.
10. Provide location of fresh water and wastewater disposal.
11. The designated business named must be posted on the mobile unit.
A fee of$100.00 per hour is charged for plan review and pre-occupancy inspections. Enclosed is
an invoice for the plan review. An invoice for the pre-occupancy and any additional plan review
fees will be given to the person in charge at the time of the pre-occupancy inspection. The fee is
to be paid within 30 days of receipt of invoice. A $90.00 late fee will be applicable if the plan
review and pre-occupancy fees are not paid within the 30 days.
The current fee for a mobile unit with approved kitchen not licensed under another permit
is $520.00.; it may be adjusted at the time of opening. Applications(s) are to be submitted
at least fourteen (14) days prior to the projected date of opening to avoid paying a double
permit fee. No applications(s) for permit(s) shall be accepted less than three (3) days prior
to the date of opening due to the time needed to review the application.
All employees handling unwrapped food are to obtain a food worker card within 14 days of
employment. Food and Beverage training is now available at www.srhd.org/safety/food.
